As a Pour Over
This Idido lot opens with an elegant floral aroma layered over bright tropical fruit notes. The cup is lively and expressive, with juicy pineapple citrus acidity reminiscent of fresh orange zest, followed by sweet dried plums and a winey complexity. The finish is clean, aromatic, and intensely sweet — a refined yet vibrant Ethiopian profile elevated by yeast fermentation.
As an Espresso
Pulled as espresso, the coffee delivers a concentrated sweetness with a juicy, wine-like structure. Citrus and tropical fruit notes are more pronounced, balanced by a silky mouthfeel and a lingering floral aftertaste. The cup remains clean and articulate, showcasing clarity without losing depth.
Farm Information
Idido coffees are known for their altitude-driven clarity and expressive aromatics. This lot takes it a step further with ORO™ Yeast Fermentation, a precision-driven approach designed to enhance sweetness, complexity, and consistency.
After careful handpicking, only ripe cherries are selected for fermentation. The cherries undergo a 3-day controlled fermentation using ORO™ yeast, chosen for its ability to amplify fruit-forward characteristics while maintaining balance and structure in the cup.
Following fermentation, the coffee is slow-dried for 18 days on raised African beds, allowing for even moisture reduction and flavour stabilisation. The result is a coffee that retains Ethiopia’s signature floral and citrus elegance, complemented by deeper sweetness and a winey finish brought out through yeast fermentation.
This meticulous process — combined with Idido’s high altitude, rich loamy soils, and consistent rainfall — produces a coffee that is both vibrant and refined along with ORO™ Yeast Fermentation, making it a standout Innovation Series.
