Farm Information
Aquiares, among Costa Rica's largest and oldest coffee farms, stands proudly on the fertile slopes of Turrialba Volcano. With a rich history dating back to its establishment by British farmers in 1890, Aquiares has been a continuous producer and exporter of high-quality Arabica coffee for over a century.
Situated between the Aquiares and Turrialba Rivers, the farm's name, derived from the Huetar indigenous language, means "land between rivers."
Part of the Rainforest Alliance, Aquiares manages the entire coffee production chain, ensuring the highest quality standards and traceability. While Caturra is the primary varietal, climate change necessitates ongoing experimentation with new varieties. The community actively tends to the trees throughout the season, engaging in pruning, fertilizing, weeding, and protection efforts.
Handpicked by skilled harvesters, the green coffee undergoes a meticulous process, including a special Anaerobic Natural method during fermentation. The farm's dedication to experimentation led to the development of a greenhouse system for drying coffee, ensuring a constant and even temperature—a vital step in producing honey and natural lots in the region's wet, humid climate.
Environmental sustainability is at the core of Aquiares' practices. With over 50,000 shade trees, natural buffers, and preservation of river valleys, the farm has become a model for ecological harmony. Aquiares achieved Rainforest Alliance Certification in 2003 and, in 2012, became the first Costa Rican farm to fulfill the Rainforest Alliance Climate Module requirements, showcasing its commitment to low emissions and carbon neutrality.
Aquiares is not just a coffee farm; it's a research hub. Hosting studies since the 1950s and currently collaborating with international institutions, the farm plays a pivotal role in advancing sustainable agricultural practices. The ongoing "Carbon-Flux project" is a pioneering effort to measure greenhouse gas exchange, contributing valuable data to global climate change research.
