The Sugarcane Decaf Process: How Your Decaf Actually Gets Its Caffeine Removed

Β For ages and even now, the word "decaf" was and can be a dirty word in our specialty coffee world. Using traditional chemical decaffeination methods that stripe away caffeine and it's natural flavours. Leaving us with flat, woody cup of yucky metallic aftertaste. But if you've ever tasted a well-made Sugarcane Decaf, you know that reputation is completely undeserved.

The Sugarcane Decaf Process: also known as the EA (Ethyl Acetate) Natural Process. It is one of the most fascinating and flavour-preserving methods in specialty coffee. This method too removes 97% to 99% of caffeine. Here's why it matters, and can change how you think about decaf forever.

Where Does It Come From?

The process originates in Colombia, where sugarcane is abundant. The key solvent used, Ethyl Acetate (EA), is a natural byproduct of the fermentation and distillation of sugarcane β€” specifically derived from fermented sugarcane molasses. Because EA is sourced from this natural agricultural process rather than synthesised in a lab, this decaffeination method is widely considered a more natural alternative to conventional chemical methods.

It's a beautiful example of terroir extending beyond the coffee itself.

How Does the Process Work?

The Sugarcane Decaf Process follows a careful sequence of steps:

  1. Steaming the green beans: The unroasted coffee is gently steamed to open up the bean's pores and prepare it for caffeine extraction.
  2. Soaking in EA solution: The beans are immersed in a solution of water and Ethyl Acetate. Because EA bonds naturally with caffeine salts, it selectively draws out the caffeine while leaving most of the flavour compounds intact.
  3. Rinsing and steaming again: The beans are thoroughly rinsed to remove any residual EA, then steamed once more to ensure the solvent has fully evaporated.
  4. Drying: Finally, the beans are dried back to their optimal moisture level, ready for export and roasting.

The entire process is designed to be gentle and you can taste the gentleness in the cup.

What Does It Taste Like?

This is where Sugarcane Decaf really shines. Because EA is selective in what it removes, the coffee retains much of its original sweetness, body, and complexity. You can expect:

  • Natural sweetness: often described as brown sugar, caramel, or stone fruit
  • Full body: none of the thin, watery quality that plagues lesser decafs
  • Bright, clean finish: without the musty or chemical aftertaste associated with older decaffeination methods

Roasters who work with EA Naturals often say it's the closest a decaf gets to tasting like its caffeinated counterpart. That's very high praise and let's be glad that it earned that.

Is It Safe?

Ethyl Acetate sounds like a mouthful, but it's worth knowing that it occurs naturally in many fruits and fermented foods which includes wine, beer, and vinegar. The EA used in this process is food-grade, and by the time the coffee reaches your cup, any trace amounts have long since evaporated during the steaming and roasting stages.

Regulatory bodies in the US, EU, and beyond have approved EA as safe for use in food processing. So you can sip with confidence.
